Mediteranean Frittata
Hello dear ones!
This week I suggest you make a recipe that works perfectly for family breakfast or weekend brunch or as a snack whenever we are hungry. Let’s prepare a Frittata, just as delicious both cold and hot.
Sounds fancy, but know that it’s very easy.

You need:
- a red onion
- a red pepper
- 200 g cherry tomatoes
- 200g spinach
- 50 g calamta olives
- 6 eggs
- 200 g cheese (feta / mozzarella / salted cheese) / any kind of cheese you want
- salt
- pepper
- olive oil
Put a tablespoon of oil in the pan, sauté the onion, then add the cherry tomatoes and spinach.
After the vegetables are done, season with salt and pepper to taste.
In a large bowl, beat the eggs, add the olives and crush the cheese. Mix well and put the vegetable mixture in the pan. Put in a tray, garnish as desired and add more cheese on top to taste. Bake for 30 minutes at 200 degrees.
