Eggplant Boats / Eggplant Stuffed with Tomato Sauce and Ricotta (Simple, Absolutely Delicious Recipe!)

For 4 boats

We will need:

  • 2 eggplants
  • 400 ml tomato sauce
  • 250 g of ricotta
  • 5-6 cloves of garlic
  • parmesan to taste
  • salt
  • pepper
  • 4 tablespoons olive oil
  • garnish with basil

 

We cut the eggplant in half. We dig the inside and cut it into irregular shapes. Season the boats with salt, pepper and massage them with a little olive oil. Bake for 15 minutes at 200 degrees.

Put a tablespoon of olive oil in the pan and put the olive cock. Season to taste and let them cook.

In another pan, put a little olive oil with the crushed garlic and let it cook. Add the tomato sauce. When the sauce starts to boil, add the ricotta and mix well. Put the eggplant pulp on top and mix. The position is ready!

We take the boats out of the oven, we fill them with the goodness obtained in the pan. Powder with Parmesan cheese and bake for another 15 minutes at 220 degrees.

When they are ready, decorate them with basil and enjoy!
